Plum, Nectarine, Strawberry, & Pear Galette and Pie Cookies

In honor of "Pi Day" tomorrow (March 14th - 3.14 - for those of you who slept through math class in elementary school), I'm sharing a mixed fruit galette recipe and the cutest pie cookies ever. Not only are these desserts delicious, but they are easy and on the healthier side of the dessert spectrum...
Plum, Nectarine, Strawberry, Pear, and Ricotta Galette

Mixed-Fruit Pie Cookies

Galette
Ingredients:
  • One package of Pillsbury frozen pie dough (much easier than homemade crust and just as tasty)
  • 1/2 cup ricotta cheese
  • Ripe plum, thinly sliced
  • Ripe nectarine, thinly sliced
  • Ripe Bartlett pear, thinly sliced
  • 2 strawberries, thinly sliced
  • Cinnamon and sugar

Recipe:
1. Preheat your oven to 350F.

2. Slice up all your fruit so it is very thin:

3. Mix your cinnamon and sugar (1/2 cup sugar to 1 Tbs cinnamon) in a small bowl.

4. Spread out one roll of frozen pie dough on a floured surface. Spread as much ricotta cheese as desired onto the pie dough. Sprinkle with cinnamon sugar (I used about 1/4 cup):

5. Start layering the fruit on top in rings leaving about an inch of dough on the edges (those edges will be folded over before baking):

6. Fold over the edge of dough:

7. Bake the galette at 350F for about 20 minutes until your crust is golden brown. Top with powdered sugar. Slice like a pizza and enjoy!

Pie Cookies
Ingredients:
*Makes 5 pie cookies.

Pie Cookies
     **Same ingredients as the Galette above

Lemon Glaze
  • 1-2 Tbs fresh lemon juice
  • Enough powdered sugar to create the right glaze consistency

Recipe:
1. Preheat the oven to 350F.

2. Slice up all your fruit so it is nice and thin:

3. Mix your cinnamon and sugar (1/2 cup sugar to 1 Tbs cinnamon) in a small bowl.

4. Spread out one roll of pie dough on a floured surface (make sure the dough is still cold). Using a cookie cutter, cut out 10 shapes from the pie dough:

5. Spread as much ricotta cheese as you like on half of the dough cut-outs. Sprinkle cinnamon sugar on top of the ricotta:

6. Layer a few pieces of sliced fruit on top of the ricotta. Top the fruit with a bit more cinnamon sugar:

7. Use egg wash to seal the edges of the mini-pies by brushing egg wash on the edges then placing a pie dough cut-out on top. Use a fork to seal the edges together:

8. Bake the pie cookies at 350F for about 20 minutes. Meanwhile, mix the lemon juice and powdered sugar to make a simple glaze. Top the pie cookies with glaze and serve!
